FOOD INSPIRATION DURING THE TIME OF THE CORONAVIRUS
Moroccan Carrot Salad
This is a light and easy to prepare dish. It takes 15 minutes to prepare, needs at least an hour to marinate and serves 4 people.
-8oz baby carrots
-2 TBS extra virgin olive oil
-1 1/2 TBS lemon juice
-2 TBS chopped parsley
-2 cloves garlic
-1/4 tsp ground cumin
-1/4 tsp ground cinnamon
-1/2 tsp paprika
-pinch of salt
-1/8 tsp cayenne
1) Grate carrots by hand or in a food processor. (I use a mini chopper.)
2) Grate or mince garlic
3) Chop parsley
4) Combine ingredients together
5) Let marinate for at least 1 hour
